Champagne Thursdays Holiday Menu

In the interest of promoting good taste, luxury and fun at an affordable price, we have chosen to make selected Champagne available to Barbette customers at wine shop prices. We hope you will enjoy and appreciate this opportunity to drink the finest bubbly as you might at home, except we do all the dishes. Available Thursday evenings 6pm-1am November – January.

Bouillot “Perle Rare” 2005, Crémant de Bourgogne……………………………...10.75 / 43 Only a few kilometers as the crow flies from Champagne, built on Chardonnay and Pinot Noir like its neighbor, complex and dry.

Ayala Brut Majeur NV, Champagne…………………………………………………..12.5 / 50 New in town, but with the pedigree of BOLLINGER behind the Champagne making. Fresh, crisp, very balanced, a drier style at this house, and a great match to most foods.

Aubry Brut Rosé 1er Cru NV, Champagne……………………………………………..15 / 60 This Champagne’s hometown is ÄY where Pinot Noir rules and Rosé is the extraordinary drink! Fuller-bodied, wild strawberries and minerals, edgy but long last flavors. This is a steal at $60 bottle.

Côtes de Blancs

This is the land of Champagne built on Chardonnay from white chalk soils. Edgy and nervy, these racy wines are often the longest lived in Champagne and they evolve into rich, long finishing complex wines that reflect their birthplace. Long time champagne aficionados know that Blancs de Blancs has the “stuff” if you want to age Champagne.

Pierre Peters Cuvée Spéciale “Les Chétillons” Brut, 2001 (Le‐Mesnil‐sur‐Oger) $94 The vineyard was 74 when this was harvested, and this is constantly in the pantheon of the greatest Blanc de Blancs. It reminds me of the ‘91 I sold at the beginning; pointed, with deep‐mineral as opposed to blatant chalk; it’s sharply focused and an utter terroir Champagne, with the green high‐toned notes of a less‐ripe vintage; this is a good thing if you like a silvery‐mercury ultra‐violet sort of wine. As I do. Disgorged 9/07. ‐ Terry Theise Everything here, even the Non‐vintage Champagne is all Grand Cru from Denis Varnier!

Montagne de Reims

This is the harshest outpost for grapes in Champagne but the unique inversion of cool and warm air on the singular rise of the Montagne de Reims (pronounced “RAHNS”) helps ripen red grapes to make the biggest bodied of Champagne but with great character and elegance, You will find Pinot Meunier here in lesser quantity, more Pinot Noir, and small amounts of Chardonnay in the blends, and even some surprises like the ancient but zippy Arbanne grape.

Nicolas Feuillatte NV (Epernay) 375 ml $22 / 750 ml $42 A respected collective of growers, the first cooperative to make Champagne with single site ideology. Light, fresh, and persistent, “Nicky Foo” delivers great value in its non‐vintage cuvée.

Ayala Brut Majeur NV $50 Started in 1860, but recently reintroduced in the local marketplace, Ayala now has the pedigree of Bollinger behind the wine making. Champagne Ayala is made in Äy, one of the 17 Grand Cru villages in the Champagne area. It differs from many other champagnes because of its crisp, Low– to Zero Dosage style. Ayala Brut Majeur is a delicate blend of 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier with only 8.5g/l sugar. It is very aromatic on the nose and very clean on the palate with a great complexity.

L. Aubry Fils “La Nombre d’Or Sable Blanc des Blancs” 2002 (Jouy-Les-Reims) $87 “Sable” is the term Aubrys use for Champagne with lower than normal pressure, but pay heed to the “des” in Blanc des Blancs because this wine has 40% Chard, 30% Petit Meslier and 30% Arbanne, and it is extremely dry with 2 g.l.RS. The Arbanne seems prominent here, all that green-meadowy stuff; oystery and precise and long with bouquet garni, and it’s a powerful, very individual wine for all of you with eclectic tastes.

L. Aubry Fils Brut Rosé NV (Jouy-Les-Reims) $60 From a tiny village at the very northern end of the Champagne region; Jouy‐les‐Reims. Aubrey has a house style that is very unique: Rich, ample, but has high toned aroma and whip‐crackin’ acidity for balance.. The blend for NV is; 40% Pinot Meunier, 20% Pinot Noir and 40% Chardonnay (though this includes a small but “present” quantity of Arbanne, Fromenteau and Meslier‐ ancient “lost” varieties), disgorgement date is always on the bottle. Full bodied, snappy, incisive, but very charming Champagne.

Laurent Perrier L-P Brut NV (Epernay) $32 The idea here is a Champagne that is fresh enough to drink every day‐ obviously an idea conceived by a stock market optimist! This cuvee does have abundant white fruits, citrus, and just a smidge of that biscuit note that makes Champagne a standout in the world of sparklers. LP is one of the smallest producers of the Epernay bigees their trademark is balance and it shows.

Laurent Perrier Grand Siècle 1998 (Epernay) $225 This house is known for its elegant style. The Grand Siecle is appropriately elusive with its rich aroma of grilled almonds and orange peels, toasted bread richness on the palate, and delicate moussant bubbles. This is the finest of Grand Cru in the house offers and is their top of the line Champagne.

Dampierre Cuvée Ambassadeurs NV (Reims) $69 Floral, apple, bread dough and lemon notes show intensity and linger nicely. Light‐bodied and balanced, with a firmly textured finish. 50% Grand Cru Fruit. Frequently the choice of French Embassies worldwide.

Dampierre Brut Rosé “Oeil de Perdrix” (Reims) $74 Mostly Chardonnay Grand Cru with the addition of red wien from notable village of Bouzy. Salmon colored, delicate subtle strawberry and mineral style.

Henriot Brut Souverain NV $53 A very high proportion of Chardonnay (40%) for Montagne de Reims Champagne, the remainder is Pinot Noir. A family run house since 1808 that was bought back from the LVMH Champagne giant.

Philipponnat Royal Reserve NV $55 This Champagne house specializes in a style that brings richness with uplifting freshness. T is their commitment to the best Pinot Noir blended with at least 30% Chardonnay, with no less than 3 yars on the yeast that gives this Champagne pedigree.

Vallée de la Marne

The Vallée de la Marne is the land of Pinot Meunier as it is earlier ripening in this frost prone valley. The style of Champagne here is fruitier and easier drinking although there are often complex surprises.

Jean Noël Haton NV Brut (Damery) $38 The Brut Extra Quality is one of several Cuvées, made from only red fruits, Pinot Noir and Pinot Meunier. The nose is of cassis with a slight sweet biscuit note, on the palate it is delicate and very fine, with a tiny bead to the bubble, a delicate mousse, and a racy and clean finish make this Champagne an effortless 2nd glass wine.

Geoffroy “Cuvée expression” Brut NV (Cumierés) $60 This Champagne is from a village that is notable for making still red wine wines as well as Champagne. The fruit gets a little riper here and balances the high acidity of this continental climate. Geoffroy makes some of the fruitiest and most vibrant Champagnes in the Marne. He is a fanatical wine freak according to Terry Theise. The Cuvée expression is about 1/3 each Pinot Meunier, Pinot Noir and Chardonnay, 12% seasoned in wood, full bodied and easy, light but red fruits abound.

Non-Champagne Sparkling Baumard

Cremant de Loire NV $38 For a delicious change of pace, why not try Chenin Blanc-made bubbly? Crystalline presentation of minerals and fruitiness.

Prix Fixe Mondays 5pm-10pm Chef Master prepares 4 to 5 course dinners, including dessert and/or a cheese course for $32. Menus often include sustainable harvested fish or locally farmed meats, but we're happy to accommodate vegetarians, vegans, and others with dietary constraints.
